The best organic sourdough

What’s GREAT at the Market this Week?

This gives their bread that authentic traditional taste, texture and its unique flavour. With so many different bread choices it really is a tough decision – should it be macadamia and honey or pumpkin or perhaps the earthy nutty spelt loaf this week????

And what is better than having the perfect sourdough with fresh locally grown and produced Grumpy Grandma’s infused wood smoked extra virgin olive oil to dip into topped with deliciously fresh dukkah from Spice Palace. Or perhaps a cheese platter with award winning olives and cheeses from Nimbin Valley Dairy.

The sweetest variety of cucumber with its thin dark green skin and crisp flesh is the Lebanese – abundant at most of our farm stalls during the summer season. It is perfect to eat like an apple between meals or sliced thinly and tossed on any salad that you enjoy.

For a quick and delightfully cooling lunch try a chilled cucumber soup. I love it with tarragon so here is my Chilled Cucumber, Yogurt and Tarragon Soup recipe.

1 kilo of cucumbers, washed and stems removed, roughly chopped

3 tablespoons chopped tarragon leaves

1 cup Greek yogurt (or coconut yogurt for a vegan option)

Cold water or vegetable/chicken stock

Salt and black pepper

4-6 servings

In a large blender, place half of the cucumbers, the tarragon and 1/2 cup of cold water.  Blend until the cucumbers are completely pureed.  Remove the blended cucumbers to a bowl and process the remaining cucumbers with another 1/2 cup of cold water.  Place all of the pureed cucumbers into the bowl.  Whisk the yogurt into the cucumber puree and season with a pinch of salt and black pepper.  Taste and adjust seasonings as needed.  If desired add more cold water to thin the soup.  Cover the soup and place it into the refrigerator until chilled, about 3 hours or overnight.
